Ingredients

1/2 kg mince Lamb meat + 1 big spoon mince garlic+ 1 big spoon mince ginger + mince hot green paper + 1 small spoon hot graham masala spices + 4 big spoons chickpeas + 1 small spoon grounded coriander + 1 small spoon hot powder + salt + oil for roasting + masala chat for serving.

Method of Preparation

Mix all the ingredients together, and knead well, then make equal balls from them, put them in the steam pot after you spread little oil in it.
Or you can use the pressure pot, cover it and leave it for fifteen minutes until it’s done, then take out the Kofta slowly, and before you serve them, heat little the oil in a pan a fried the Kofta and you can just steam them, and then serve them…

6 glasses flour
2 glass water
8 spoons oil
2 eggs
1/2 small spoons salt

Method of Preparation

Mix all the ingredients together and knead it for few times until it start being soft, and keep it on side for one hour to rest.
Cut it small pieces and paint each piece with oil, then spread it out very thin, and make it like scroll shape.
Spread each pieces and put it in the pan paint with little oil and flop it on the other side until it’s done.

2 spoons smash garlic
4 spoons mince coriander
(Salt + turmeric + ginger + anise + carry (small spoon from each and you add more or less as desire

Method of Preparation

Boil the yellow lentil with water until it’s done, then add the spices and stir them well and leave it to boil for five minutes.
In a small pan add the butter and melt it then add the smash garlic, then the mince coriander, then serve it hot.

Ingredients

2 chicken breasts
Big onion
2 hot pepper
2+1/2 glass rice
1 cans tomato paste
Mixed dried fruits
1/4 glass oil
Water ad needed
7 grains cardamom
2 rod cinnamon
Table spoon carry
Salt as desire
Small spoon cinnamon
Table spoon Indian hot spices

Method of Preparation

Mince the onion and the chicken into cubes or slices, then heat the oil in the pan and add the cardamom, the cinnamon, the hot pepper for few minutes.
Then add the onion and continue stir until the onion is got the yellow color, then add the chicken.
Put the dried fruits on top of the chicken for few minutes and stir t, add the spices, the salt and leave t for fife minuets.
Wash the rice in hot water then add the tomato paste to the chicken , then add the rice, and little water until the rice is covered with water,
Waite until it start boiling, then turn it on low heat, and keep it until it’s cooked, then serves it.

ساموزا الخضار بعجينة هندية أصيلة

Ingredients

3 pieces potatoes
3 pieces carrot
1 glass pea
1/2 pieces Cold yellow paper
1 onion
1 small spoon ginger
Hot pepper as desire
3 big spoons coriander
1/2 small spoon salt
1 small spoon sugar
1 small spoon lemon
Dash of cumin
1 big spoon oil

Dough ingredients
1 kg flour
1/2 small spoon salt
1 small spoon lemon

Method of Preparation

Mix all the tough ingredients together, then add the warm water until you got the solid dough, then keeps it ton rest.
Cut the vegetables into cubs and boil them, add little amount of the oil and roast the onion in it , add the sugar , the ginger , and the hot paper , then add the rest of the vegetables , then add the lemon juice , the coriander , and keep the stuffing to cool down.
Cut the dough into balls, and spread out each one like Le anise bread, then cut it into half circles.
Close the opening edges like a cornet, then stuff it and close it from top with flour mix with water.
Deep fried them, and serve it hot.
